Addressing the answer by SRG, one thing I'd disagree with. Often, don't have the interviewee talk most of the time. Steer the interview to find out new things as you go along. If they've already shown they're good at something, lead them to talk about something else. If they're doing multiple interviews, talk much more in the first one; set them at ease.
